Menu Plan for Week of April 4

I’ve come to the conclusion that I like the way The Happy Housewife plans her menus. She plans them in a flexible way, not assigning specific meals to specific days. So here is what I am going to be making this week.

Breakfasts

Waffles with fruit sauce

French toast

Biscuits and gravy

Romanian Mamaliga (like this recipe, only I’m not going to use the cheese part of it)

Baked Oatmeal

And on Saturday, we will have cereal.

Lunches:

Spaghetti

Vegetable pot pie

Rice and curry

Salisbury Veggie-Steaks

Cowboy Tamale Pie (vegetarian)

Suppers:

Smoothies, pizza and/or calzones, vegeburgers, sandwiches or wraps with spread, and fruit.

    Your menu sounds delicious! I love mamaliga – I should add it to my feature on vegan, gluten-free breakfast ideas this week. I remember how amused my grandfather was when we introduced him in the 80s to this fancy yuppie food, “polenta” and he said, “This is mamaliga, what my mother made for breakfast for me every morning of my life!”

    I love veggie tamale pie, too. I must be craving corn, since all the corn dishes are standing out for me!
